I'm so thrilled to share with you one of my go to's for busy weekdays! Sheet pan dinners are the most simple and quick solution when you need to get dinner cooking while the kids are doing their homework and getting everything ready for the next day.
Whatever is your protein of choice you can just add some veggies and get a complete and satisfying meal for the whole family. This time I chose chicken because that was what I had in the freezer. Also, I had frozen green beans and decided to use some potatoes that were forgotten in the pantry and needed to be used.
This quick of meal is also great to use leftover produce that gets stuck in the fridge by the end of the week: just mix it all up, season it and bake.
So, for my sheet pan I used the following ingredients:
Get the sheet pan on the counter and brush it with some oil (I used coconut oil) so the meat and veggies won't stick to the pan. You can also choose to line the pan with some parchment paper, it will work out perfect too.
Just pour all your ingredients in the pan and season them generously. For the chicken I used salt, garlic powder and lemon juice. The veggies were seasoned with salt, pepper, onion flakes and dried parsley. I also added some olive oil and mixed them around so it would spread evenly through the whole vegetable mix.
I also added some extra diced fresh garlic to give them a bit of a kick!
I took the pan to the oven and let it bake for about 20 minutes at 400F. Just keep an eye on that chicken to see if it needs a turn, half way, so it doesn't get dry. I also added some bacon strips at the end and cooked the whole pan for another 10 minutes just to give a chicken a bit of the bacon flavor.
I couldn't get a picture of the whole pan after cooking it because everyone was so hungry that they just dug in and didn't give me enough time to take a picture! I guess that's a good sign, right?
