Summer days are long, specially if you have kids around! There's always time for another puzzle, another book, another movie but then it's lunch time! Today I had my son's lunch ready from yesterday but I was feeling like eating something fresh, a pretty and clean salad!
I love salads and I was able to pass on this to the kids, also. It's great because they get to eat a lot of vegetables through salad. It can come as a side salad to go with the main course or as a meal sized salad with chicken or tuna - they love it and I think it's great having them liking all kinds of food. Healthy food. We'll have pizza night on the weekend too, that's always a fun thing to do!
I started with the ingredients for the salad. Simple ingredients for a great light meal on this summer day.
1 can of tuna (I used Genova because I just love the flavor and texture of this particular tuna, not mushy at all, meaty and really tasty with the perfect amount of oil in it)
2 soft boiled eggs
1 bag of frozen organic green beans (I used frozen because I didn't have fresh and, really, these are great and I always have a couple of bags in the freezer to make sure I have greens for the week)
1 cup of Pearl Kalamata Olives (90 Kcal pack)
Sliced almonds (1/4 cup)
Feta cheese (about a 1/4 per plate)
Balsamic glazed vinegar
Pink Himalayan salt
All I had to do was cook the green beans in the microwave according to the instructions on the package and cool them down in a bowl of iced water. The rest is just assembling all the components of the salad on the plates.
Start by dividing the green beans by two plates - this recipe is for two people. After that open the can of tuna and just mix it a little bit with the olive oil that comes in the can and evenly pour it on the plates. Crumble the Feta cheese and do the same thing adding the Kalamata Olives, as well.
To finish it up just cut the eggs in half and put them on top of the salad.
Season with the Himalayan salt, drizzle some of the glazed balsamic vinegar and sprinkle some almonds on top of it all.
That's it! Easy, simple and delicious! Trust me, all you have to do is get great quality ingredients and the rest is done is 10 minutes. I'm doing this salad again, for sure. My son doesn't like Feta cheese but as soon as he saw my salad he asked me to make it for him. I think that's a great sign, don't you?
In the winter time I'll be making a winter green bean salad too and we'll look at the differences! Lots of different colors will be popping up!
