Is a cookie ever enough??
When we're talking about cookies I always think of crunchy, tasty but healthy options because, let's face it, no one east 2 cookies at a time! Right?? For the past week we have been trying the Chocolate Chip, the Cinnamon Sugar and the Sea Salted Caramel. I really have a favorite: Sea Salted Caramel! I love these cookies just by themselves with a cup of coffee or mixed with yogurt and fruit to make a quick and satisfying snack to get us through dinner time without crazy cravings.
The kids are on Summer break so they've been giving me ideas about snacks they want and we've been using these cookies to give them an extra nudge!
For this one we used fresh grapes on the bottom (thoroughly washed, of course!), vanilla yogurt topped with strawberry and chia seeds jam and then we added some Sea Salted Caramel Cookie Chips on top. Perfect! Simple and quick which is what we're all looking for during Summer time.
We also had whipped cream and chocolate melts around for extra fun!
Another idea we had was to make mini ice cream sandwiches with the Chocolate Chip Cookie Chips and some Arctic Zero ice cream that we love! Chocolate Cherry flavor is divine and it was perfectly paired with this crispy cookies. The kids have already asked for them again!

The last flavor that we tried was the Cinnamon Sugar which is seriously addictive. It reminds me of Christmas flavors and for me that's a winning situation already! I decided to make kind of an apple pie filling dessert. I used two diced apples, mixed them with a couple of tsp of brown sugar, 1 Tbsp of coconut oil and mixed some crumbles cookies in. After having it really well mixed I took the mixture to the oven at 350 F for about 25 minutes and had it distributed to individual size cups. Added some more crumbled cookies and it was really a great and easy dessert. We all loved it and 'll be trying the recipe with other fruits and toppings, as well.
Looks great, doesn't it? I think it's just wonderful when you can use such simple ingredients but get a dessert with a great flavor and that makes you think of trying it over and over again with other flavor combos! Oh, my! Of all the days the kids could have asked for something extra sweet for snack it had to be today...I'll explain! In the morning I went to get a root canal, how great is that?? With all the worries about my own dental health i got home to two hungry kids who wanted something sweet!
Something that tasted like summer!
And then I remembered about a cooking show that I had watched not so long ago on TV where they were making sweet grilled sandwiches. There it was, the perfect summer snack! We were out of ingredients so we went grocery shopping on a very hot day just to make a snack! What don't we do for your children??
I took my little helper with me and she was very concerned about doing her part of the shopping trip!
After getting home I started to plan the three sandwiches I wanted to make and I separated the ingredients in order to do so. Fast was the way to go! We all know how kids get when they're hangry!
Hazelnut chocolate creme, marshmallow creme and strawberries:
Well, summer gives us the right to go a bit further with sweet things! I usually don't have these items around but, at least, once a year I buy a jar! Why not? If we eat things like these as a treat it really gives treats a different meaning! I tend to impose strict limits during the school year but, for now, lets just enjoy the summer!
For the sandwiches I used Challah bread (that I forgot to photograph!).
I spread hazelnut chocolate creme on one slice of bread and on the other I used marshmallow cream. I then washed and cut up some fresh strawberries and put them between the two slices of Challah bread. I used my panini maker and made sure to brush the outside of the bread with some butter to get those grill marks on! That's part of the fun too! It was done pretty quickly, approximately in 3 minutes I took it of the machine and it was great!
Banana, chunky peanut butter and honey:
For this sandwich I used Betsy's Best Gourmet Peanut Butter with Cinnamon and Chia Seeds. Just spread it on one of the slices of bread, covered with a sliced banana and drizzled some honey on top. Brushed the outside of the bread with butter and off it went to the panini maker! 3 minutes and it was done! Two sandwiches done, one to go!
Cream cheese, cherries and almonds:
On this last sandwich I spread both of the slices of bread with cream cheese and covered one of them with washed, pitted cherries. Then, on the other slice I pressed some almonds so that they would stick to the bread when turning them over to make the sandwich. Brushed with butter and off it went.
They really came out delicious and I'm sure we'll be having them soon between summer is over. I'm also going to try and make some of these sandwiches in savory versions. I have a thing for grilled sandwiches and, with the right ingredients they can turn into gourmet meals in no time!

I've been snacking on these bars for a couple of weeks. i took them on a family canoeing adventure last weekend and was surprised that, even being a very hot day, the bars kept together and didn't become mushy at all!
I also used the bars to enrich my breakfast bowls! I had one with banana and the dark chocolate bar. Simple vanilla organic yogurt with a sliced banana and the bars. I drizzle some raw honey on top and it was delicious and kept me going through the morning without any kind of cravings!
Another bowl was made up by a banana, peach smoothie with a Tbsp of Greek vanilla yogurt and some organic milk. Added some spirulina for the health benefit and got an amazingly green breakfast! I topped it with some fresh blueberries, shredded coconut and some flax seeds.

Everyone who knows me knows that I am a chili lover because I do love it! Every version of it pleases me: chicken with white beans, beef and black beans, even vegetarian chili. Although we're not vegetarian in our house I always try to have a meal a week made up just out of veggies. As for the kids they eat veggies everyday and 3 pieces of fruit too, at least! They love it and with baby carrots and cherry tomatoes going all year round it's easy to get them in their lunchboxes for school!
Back to the chili!
I got this frozen meal from Grainful to show you. Isn't it pretty? It's lovely and delicious too just with the right amount of spiciness. In every bite you get the taste of smoky chipotle peppers, bold chili spices, vegetables, quinoa, three types of beans, sharp cheddar cheese and 100% whole grain steel cut oats. The cheese on top is amazing and it makes the chili creamy and gooey, just like I like it!
You'll find the following ingredients on the chili: water, tomatoes, black beans, tomato paste, pinto beans, kidney beans, cheddar cheese (pasteurized cow's milk, cheese culture, salt, enzymes), Organic corn, 100% whole grain steel cut oats, onions, green bell pepper, red bell pepper, quinoa, olive oil, chipotle peppers in Adobo sauce (chipotle peppers, water, vinegar, sugar, salt, tomato paste, smoke essence, onion, garlic), minced onions, spices ([chili powder (chili powder, paprika, garlic, oregano, cumin, salt], smoked paprika, cumin, granulated garlic), salt. I decided, once again, to use the chili and incorporate it into a recipe but you can eat it right from the tray where it comes in, after heating it in the microwave for 4 minutes. It's just a matter of having the time, will power and ingredients to work with!
I used two zucchinis and after washing them cut them in half lengthwise. I scooped the pulp of the zucchinis and reserved them to make some soup for dinner. Otherwise I could have diced the pulp and added it into the chili, it would be delicious too!
After doing this I heated the chili and filled the zucchinis with it right up to the top. Be careful not to overfill it so it wont come over the edges, which could get the filling a little burnt. I placed the stuffed zucchinis in a pre-heated oven at 400 F for about 15 minutes. It's just the right amount of time so the zucchinis get a little cooked but they still come out with a bite to it!
Take the zucchinis out of the oven and served with a side salad and corn chips to dip in!
With fresh lemon water this was the perfect lunch for a hot Summer day!
The final touch was a good handful of crumbled Feta cheese! Can't go wrong with a little bit of extra cheese, can you??

Get a Nan bread grilling for a bit. You can use a panini maker or a grilling plate, just make sure that you're watching it because it gets done in about 1 minute! Get the grilling marks on the bread so that all the flavors that you're going to add on top get all the way through the bottom!
In a bowl mix some Greek plain yogurt with chopped cilantro and mix it up very well. Season with salt, pepper and a little bit of cumin. Then, it's assembling time:

Here, in New Jersey, we have been getting a pretty moody Summer. The days are usually hot, in the 90's F but they have also been cloudy and rainy. Even the kids don't feel like going outside to play. They prefer to stay inside and enjoy the cooler air.
As for me, I'm feeling a need for some comfort food. And, let me tell you, since I opened the Homestyle Cheddar Meal Kit, from Grainful, I sure found what I was looking for! I made these meal on a day that was going kind of hectic and I decided to try and cook it on my InstaPot that also works as a slow cooker. According to the directions on the package all I needed to do was put some water on the bottom of the slow cooker and add the oats that came in the meal kit, reserving the cheese mix.
Wow! That was like an answered prayer for me! To have a meal cooked while I'm getting some work done or just enjoying some play time with my kids during this Summer break is the ideal thing! So, I did just that and when the cooking time ended I just had to open to slow cooker and mix the oats with the remaining water. Then, I added the cheese...it's just delicious and luscious! As we well know as moms, we're always looking for snacking options for our kids. I really had to do a post on such a discussed topic. Now that it's Summer time we try to keep meals simple and fresh but also easy to make. Food packed with flavor that doesn't take hours to cook or requires you to make a mess out of your kitchen!
Most people look for appetizers that they can have ready when friends and family come over. Usually finger food or simple things that can be carried around on a small pate and handled without much care. That's why I wrote this post. It's the most simple thing to do if you have this in mind: keep it simple! Simple and wholesome ingredients are everything you need, just had some creativity and there you have it: gourmet appetizers that look amazing and that are made in a flash!
I'll give you 4 examples and then all you have to do is try them for yourself and create variations around it: change some of the base ingredients and come up with new flavor combos that suit your family's preferences.
Mediterranean toasted bread
If you want to skip the burger and go for a lighter version you have to try this! It's scrumptious and yet so easy to make. Just get the best ingredients you can find, preferably organic, and you're off to a perfect meal!
For the bread you see in the picture I used a traditional bread from the island of Madeira (Portugal), called "Bolo do Caco". It has a distinct texture and it tastes great if toasted for a little while. You can use any kind of soft but artisanal bread, it's perfectly fine.
Toast the bread on the toaster or on the grill. It gives it a deeper flavor if you can do it on the grill. Brush the bread with olive oil and then use a garlic clove (without the peel) to brush the bread to give it that hint of garlicky flavor. Arrange a slice or two of prosciutto on top of the bread and then cover it with basil leaves, halved cherry tomatoes and olives. Sprinkle it with some good quality Feta cheese. To top it off and give it an extra boost i used some dolops of chilli jam.

Bacon wrapped asparagus
My husband and I LOVE asparagus! Now that I find them at a reasonable price I'm baking them and grilling all the time. It's a great healthy adding to your meals and it really has a distinct flavor you can find anywhere else. The simplest solution ever: just wrap 3-4 asparagus (depending on the size) on a thick slice of bacon and roast in the oven at 400 F for about 15 minutes. Be on the lookout because time can vary depending on the oven.
I like to drizzle some glazed balsamic vinegar right at the end, before serving. That thick texture and bold flavor of the vinegar matches perfectly with the saltiness of the bacon and the creaminess of the asparagus!
Cherry tomatoes, baby mozzarella and Kalamata olives skewers
Do you imagine how simple this is? I served these skewers at a recent get together at my house and everyone love them. It doesn't get easier than this. Get some cherry tomatoes washed, baby mozzarella cheese (marinated with olive oil with some chili and herbs, to grab the flavor for about 2 hours), Kalamata olives (pitted is the best option because it saves you a lot of time and they will be in a perfect shape) and basil leaves.
Just start building your skewers with a mozzarella cheese, basil leave, cherry tomato, Kalamata olive and finish with another tomato. Just make sure that you get small cherry tomatoes because you'll want to choose bite sized tomatoes, not the big one. That would me a mess to eat!
Pitta with mushrooms, asparagus and pesto
This pittas are great as an appetizer or as a light meal with a fresh green salad on the side. They are pretty simple to make and just need 10 minutes in the oven, at 400 F. Arrange the pittas in a tray that can go to the oven and brush them with pesto; don't over do it. Pesto has a strong flavor so a little goes a long way!
After washing and cutting up the mushrooms (I try to buy organic, once again for the flavor and quality, but if you can't just use regular mushrooms) pat them dry and arrange them on top of the pitta. Put some washed asparagus on top and finish it with some prosciutto shavings. Get them in the oven and just enjoy that mix of flavors that is absolutely amazing!
The saltiness of the prosciutto and the mushrooms really go so well! I'm making these throughout the summer!

So, I guess the really hard part of it is to choose the next flavor that we're going to try at our house! We've tried almost all of the chunky pints, some creamy (like the Cake Batter and the Salted Caramel) and the Cake Batter Dipped Bars.
