I've always liked flavorful meals which are easy and quick to prepare. Sometimes I do love spending my time in the kitchen but, when something comes up unexpectedly or "just because" there are days when I just want something ready in a snap!
Sheet-pan meals are perfect for that: just put everything on a baking sheet, add some seasoning, your choice of cooking fat and freshen it up with some freshly chopped herbs in the end and you have a winning meal!
This time I had some amazing Wild Gulf Shrimp from Sea to Table and I decided to use them and pair with some beautifully roasted veggies sprinkled with lemon juice and capers. It was the perfect flavor combo and the colors on this meal just make me smile and feel happy!
1 - Preheat the oven at 400 F.
2 - Peel the onion and slice it. Wash the carrots, peel them and cut into slices.
3- Peel the butternut squash and cut long strips. Use the top of the squash and leave the other half to cook up a batch of soup!
4 - Cut the florets from the broccoli crown and wash them.
5 - Assemble your sheet-pan meal: line a baking sheet with parchment paper, to help clean up afterwards and add the vegetables and the shrimp. Season with the Primate Palate New Bae seasoning and toss everything to make sure that every bit of food is covered with the seasoning.
6 - Spray some avocado oil on top of the mix and roast everything in the oven for about 15 minutes. Remove the pan from the oven and sprinkle the juice of half of a lemon on top of the baked veggies and shrimp. Add the capers. Take the sheet pan to the oven for another 5 minutes or until everything is perfectly cooked.
This is the kind of meal that is really simple and versatile. I do sheet-pan meals all the time and change the ingredients and flavor combos to get variety on my diet. There are a lot of other options and have already featured some of them here on the blog:
Use different seasonings and fresh herbs to freshen up the meals and sprinkling some fresh orange or lemon juice is also a great idea to add flavor and a fragrant touch!
