I always have minced meat in the freezer to cook a quick meal on a busy school day! It's a very versatile ingredient and you can make hundreds of different meals with it: tacos, lasagna and pasta bolognese are dishes that the kids love and I usually pick quick and easy recipes.
This time I wanted to use the Man Cave Craft Eats Skinny Dipping ground chicken with sun dried tomato and basil and this seemed like the perfect dish! Somewhat of a refined tasting dish but simple and easy to put together. I found the most amazing big Portobello mushrooms and I immediately thought about stuffing them, using them as a shell and base to my chicken. The end result is a delicious, mouth watering appetizer or meal if you pair it with a green salad.
